Soave
A quaint medieval town located in the northern region of Veneto, Italy. Most famous for its production of a unique dry white wine style made from Garganega grapes. The Soave wines tend to be acidic, lean and crisp. The best Garganega vineyards are located on the rolling hills above the village of Soave. Younger wines tend to be taste of honeydew and white peach while older vintages have notes of candied fennel, honey and preserved lemon. Pairs very well with shellfish, chicken and tofu.
