Republic of Fremantle are one of the few Distilleries in the world to craft their spirits from scratch using innovative grape to glass distilling methods, and they’re based right here, in the heart of Fremantle!
We are so excited to host Master Distiller, (and passionate scientist), Oliver Kitson, in this collaborative and colourful masterclass. You’ll be greeted with a signature cocktail on arrival, before making your way through the signature range of spirits. As Oliver guides you through his distillation process, and imparts wisdom drawn from his fascinating experience, you’ll create your own gin and tonics with the Aromatic and Full Bodied gins. To top it off, these gins will be enjoyed alongside individual seafood platters, which have been thoughtfully paired to each beverage.
Sourcing Verdelho from 100-year-old vines in the Swan Valley, the Republic of Fremantle double distil in their custom-built copper still. This small batch, custom process allows them to create a unique base spirit; “Using a grape base is a labour of love, but we do it because it makes spirits that are silky-smooth, filled with individuality and complexity of flavour.“ Oliver Kitson, Master Distiller
Oliver Kitson started his career in the UK as a brewer and quality manager at Purity Brewing. After several years making beer he switched to crafting spirits and became Head of Production at London’s prestigious Sipsmith where he was responsible for the full scope of liquid production at the company. Oliver’s journey has now taken him to our very own doorstep, as Master Distiller at the grape-to-glass distillery, Republic of Fremantle. Enjoying the opportunity to explore new flavour profiles, Oliver has drawn on his vast experience and knowledge to craft a world-class range of spirits that are uniquely Western Australian from scratch. A passionate scientist, Oliver originally set out to be a pharmacologist completing an honours degree in Biomedical Sciences at the University of Edinburgh before achieving a Masters in Brewing and Distilling at Heriot Watt University. He is a member of the Royal Society of Chemistry and a mentor for brewing and distilling students.
