This light skinned grape comes from Catalonia, Northeastern Spain and its one of the most widely planted varieties. Most famously used in its role in Sparkling Cava and some still-whites. It has high acidity, high  polyphenols, density and high sugar levels. The juices of the grape help to balance of the acidity, helping to create well balanced wines. It is favoured by growers as it contains high levels of an antioxidant resveratrol which helps protect against disease in the vineyard and gives Cava its age-worthiness.
