Using a majority of the local varietals to make cava, Xarel-lo, Macabeo and Parellada, it isn’t uncommon to blend in some Chardonnay. Cava is made in the traditional method, just like champagne but the local varietals give a fruitier and more tropical note, making for an easy drinking, dry and tropical sparkling wine.
