THE VARIETY
Savagnin
Savagnin is an ancient variety, originating from France. Planted in Australia, earlier this century it is easily confused with other green grape varieties. A small berry, thick skinned variety most famous for its use in Vin Jaune. It is highly aromatic and slightly acidic it is used to make dry or sparkling whites. Citrus and floral characteristics, Savagnin pairs well with aged Comté cheese, roasted chicken or try with a fluffy gruyere cheese Soufflé.
THE REGION
Margaret River
Western Australia’s most famous wine region was established by Dr. Tom Cullity at Vasse Felix in 1967. Quickly followed by Moss Wood and Cullen. Today, Margaret River has over 150 producers on widely varying soils with the region’s best reds coming off the ironstone gravel. Within the region, areas such as the Wilyabrup Valley—a warm maritime climate—are the beating heart of Cabernet plantings. Though famous for Cabernet Sauvignon, Chardonnay and Shiraz shine here too.
